Amy’s No Chicken Noodle Soup

Amy’s No Chicken Noodle Soup is possibly the first thing I grab (or get someone to grab for me) when I am home sick with a bad cold. While canned soup is no match for a homemade soup, when you’re sick you probably don’t have the energy to make your own from scratch. Amy’s version is very reminiscent of Campbell’s chicken noodle soup, and some people may find that comforting and familiar. Amy’s vegan chicken soup is a great addition to your line of cold defence. It is also a satisfying treat on a cold winters day. Lightly toasted bread with Earth Balance is a great side to this comforting soup.
