Amy’s Black Bean Burrito

Some weeks life is too busy to make dinner every night. On busy nights I like to have a quick meal available to satisfy my hunger. Amy’s Black Bean Burrito is just one such item. The wrapper instructs that the burrito either be microwaved for a total of 2 minutes, or baked in the oven for 50 minutes. Microwave it is. Whenever I make these burritos (in the microwave) I find that they are still cold in the center, so make sure to check the temperature before you dive in. In the microwave, they end up being unevenly heated, so they are probably better heated in the oven if you can bare to wait that long. That being said, these burritos are wholesome, hearty, and delicious. Try not to burn your mouth off  while trying to swallow it all in one bite!
